Ginger Carrot Soup by the Chilled Out Bearded Man
Delicious Ginger Carrot Soup. Perfect for holidays and special meals.
Light. Tastey. A little spicey. A little sweet. Pretty easy except for some cutting and peeling.
Serves: 6
Prep Time: 15-20 minutes
Cooking Time: 30-40 minutes
Ingredients:
2 tbsp olive oil
3 in piece of fresh ginger, peeled and coarsely chopped(adjust amount to adjust spiciness)
1 small onion, coarsely chopped
1 1/4 lbs carrots, peeled and coarsely chopped
8 oz vegetable broth
1 cup orange juice
nutmeg, salt and pepper to taste
sour cream, optional but delicious
Tools:
Medium soup pot, peeler, blender(or food processor), strainer, chopping knife, goggles(for cutting onions)
Instructions:
1) Heat onion and ginger in oil. 5 min. Low/Medium Heat. Till onions soft. Stir occassionally. Uncovered.
2) Add carrots, broth, and orange juice. 2-5 minutes. Medium Heat. Till boil. Don’t stir. Covered.
3) Lower heat. 25-30 min. Low Heat. Till carrots tender. Don’t stir. Covered.
4) Remove liquid (and save it). Puree in blender and mix back into liquid.
5) Add spices and stir.
6) Serve hot (with a dolop of sour cream).
